Barton was originally called Salisbury's Mills, and later Newark. Barton was adopted as a name in 1853. The present name is for Barton Salisbury, who owned the land upon which the town is now situated.

According to the United States Census Bureau, the town has a total area of 19.5 square miles (50.4 km²), of which, 19.2 square miles (49.8 km²) of it is land and 0.2 square miles (0.6 km²) of it (1.23%) is water.

As of the census of 2000, there were 2,546 people, 896 households, and 746 families residing in the town. The population density was 132.5 people per square mile (51.1/km²). There were 919 housing units at an average density of 47.8 per square mile (18.5/km²). The racial makeup of the town was 98.39% White, 0.16% African American, 0.04% Native American, 0.39% Asian, 0.04% Pacific Islander, 0.08% from other races, and 0.90% from two or more races. Hispanic or Latino of any race were 0.59% of the population.
